Birthday Cake Scones
Makes 9
INGREDIENTS:
375g self-raising flour plus extra to dust
Pinch of salt
150ml thickened cream
190ml (¾ cup) lemonade
1 tsp vanilla bean paste
3 tbsp Dollar Sweets 100s and 1000s
VANILLA GLAZE:
100g icing sugar mixture
1 tbsp milk
1 tsp vanilla bean paste
METHOD:
Preheat oven to 220ºC (200ºC fan). Line a large baking tray with baking paper.
In a large bowl combine flour and salt, mix well.
Make a well in the centre and add cream, lemonade and vanilla bean paste. Use a metal knife to mix the ingredients until they form a rough dough.
Turn out the dough onto a lightly-floured clean surface.
Lightly knead the dough then add sprinkles and knead until just combined (kneading the dough too much results in dense scones!).
Roll the dough out to 1 inch thick and use a round cookie cutter (about 7cm) to cut 9 rounds from the dough.
Arrange the scones so they are touching in a square, on a prepared baking tray.
Bake for 10-12 mins until lightly golden. Allow to cool completely.
To make the vanilla glaze, whisk together all ingredients then drizzle over the cooled scones to serve.
