Mini Basque Cheesecakes



MINI BASQUE CHEESECAKES

INGREDIENTS:

500g cream cheese, softened to room temperature

250ml thickened cream

135g caster sugar

½ tsp sea salt

10g plain flour

10g cornflour

1 egg yolk

1 tsp Dollar Sweets Vanilla Bean Paste

3 eggs, room temperature

METHOD:

Preheat a fan-forced oven to 200ºC. Line a standard muffin tin with 12x Dollar Sweets Muffin Wraps.


Add cream cheese to the bowl of a stand mixer fitted with a beater. Beat until smooth then gradually add cream in a thin stream, beating it as you pour, until just combined. You may need to stop and scrape down the sides of the bowl during this step.


Add sugar and salt and beat for a further 2 mins.


Add both flours, yolk, and vanilla. Beat until combined.


Add eggs, one a time, making sure each egg is incorporated before adding the next.


Strain the mixture through a fine sieve into a jug. Discard any solids. Divide the batter evenly between the Dollar Sweets Muffin Wraps.


Place tray onto the middle rack of the oven and bake for 20 mins, then reduce heat to 150ºC and bake for a further 10 mins until the cheesecakes has set.


Allow cheesecakes to cool to room temperature to serve, or store in the fridge and bring back to room temperature when ready to serve.
