***You will need a silicone macaron baking mat, a Wilton 1M open star piping tip and large piping bag for this recipe***
INGREDIENTS
150g egg whites, at room temperature
210g caster sugar
1 1/2 tsp cornflour
1 tsp white vinegar
Dollar Sweets Neon Food Colours
Lustre dust, to decorate
METHOD
Preheat conventional oven to 120ºC, place the macaron mat onto a large tray. Fit the open star tip into the piping bag.
Combine egg whites, sugar and cornflour in the bowl of a stand mixer. Start the mixer on medium speed, setting a timer for exactly 8 minutes. When the mixture becomes frothy, turn the mixer to high and continue mixing for the remainder of the 8 minutes. Turn down to low, add the vinegar and whisk until just combined. The meringue should be glossy and stiff.
Divide meringue evenly between 4 bowls. Colour each bowl with Dollar Sweets Neon Food Colours (1 colour per bowl) and mix until just combined.
Spoon the meringue into the prepared piping bag, 1 tbsp at a time, alternating between the colours. Pipe swirls of the meringue onto the macaron mat, then reduce oven to 90ºC and bake for 1 hour and 45 mins. Turn the oven off, leaving meringues in the oven with the door closed to cool completely. Brush with lustre dust to decorate.
